Ingredients

– 15 sprigs fresh thyme

– 1 small red onion

– 3 medium scallions

– 1 small habanero or scotch bonnet pepper

– 2 tablespoons all-purpose seasoning

– 2 tablespoons plus 1 teaspoon Jamaican curry powder

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1/2 teaspoon ground white pepper

– 1/2 teaspoon freshly ground black pepper

– 4 pounds bone-in chicken pieces

– 2 cloves garlic

– 2 tablespoons vegetable oil

– 2 cups water

– 2 medium white potatoes

– 1 medium carrot

– 1 chicken bouillon cube or equivalent

– 6 allspice berries

– Salt, to taste

– Roti or rice for serving

Instructions

1-First, prepare the thyme leaves, red onion, scallions, and habanero or scotch bonnet pepper, then mix with the seasonings and marinate the chicken pieces for at least one hour. This step lets the spices sink in and build that rich taste.

2-Next, mince the garlic and cook it with vegetable oil and the remaining curry powder in a pot over medium heat.

3-After that, add the marinated chicken and cook covered for five minutes to seal in the flavors. Pour in water mixed with the reserved marinade and bring it to a boil until the chicken turns tender.

4-Finally, toss in the potatoes, carrots, bouillon cube, and allspice berries, then keep boiling until the potatoes soften and the sauce thickens nicely.

5-Serve it hot with roti or rice for a complete meal.
