1/4 teaspoon cayenne pepper (optional)
1 can (14.5 ounces) diced tomatoes
2 1/2 cups chicken broth
1 1/4 cups rice
Instructions
1-Heat the oil in a large skillet over medium-high heat and brown the chicken pieces on all sides without fully cooking them, then set them aside. Next, brown the sausage slices until cooked on both sides and add them to the bowl with the chicken. Reduce the heat to medium, add butter and flour to the pan, stirring to combine and scrape up any browned bits for extra flavor.
2-Add the chopped onion, garlic, celery, and bell pepper, and sautΓ© for about 3 minutes until they soften. Stir in dried basil, Cajun seasoning, diced tomatoes, salt, pepper, and optional cayenne pepper to build the base. Pour in chicken broth and rice, bring to a gentle boil, then return the browned meat to the skillet.
3-Cover with a fitted lid, reduce heat, and cook for 20 minutes. After that, remove from heat and let it rest with the lid on for 10 minutes to enhance texture and flavor. Finally, fluff the rice gently with a fork and let it rest for an additional 5 minutes before serving for the best results.
