– 1 tablespoon (15 ml) fresh lime juice

– 2 tablespoons (28 g) unsalted butter, softened and cut into 4 pieces

– 18 ounces (509 g) bittersweet chocolate, chopped for coating

– 4 ounces (113 g) white chocolate for drizzle

– A few green candy melts for coloring the drizzle

Instructions

1-Gathering and Infusing Flavors: First, heat the heavy cream with lime zest until it’s nearly boiling, then remove it from the heat to let the flavors infuse for about 30 minutes. This step pulls out the bright, zesty essence of the limes, making your truffles truly special. Once infused, place the chopped white chocolate in a bowl and add the lime juice and butter without stirring yet.

2-Mixing and Chilling the Mixture: Reheat the infused cream to just simmering, strain it to remove the zest, and pour it over the white chocolate mixture. Stir gently in one direction until everything is smooth and creamy. Cover the mixture tightly with plastic wrap, let it sit at room temperature for 1 hour, then refrigerate for 5 to 6 hours or overnight until it’s firm but still easy to scoop.
