Instructions

2-Season the 2 ribeye or sirloin steaks (8 ounces each) with 1 teaspoon salt and 1/2 teaspoon black pepper.
3-Cook the steaks in a hot skillet with 2 tablespoons olive oil for 4 to 6 minutes per side, depending on desired doneness, such as medium-rare at 130ยฐF internal temperature.
4-Prepare the lemon herb butter by mixing 1/2 cup softened unsalted butter with 2 tablespoons fresh lemon juice, 2 tablespoons fresh herbs (1 tablespoon parsley, 1/2 tablespoon thyme, and 1/2 tablespoon rosemary), and 2 minced garlic cloves until well combined.
5-Top the cooked steaks with the lemon herb butter mixture.
6-Serve the steaks alongside the mashed potatoes for a complete meal that takes about 40 minutes total.
