1 cup grated Parmesan cheese, divided (4 ounces)

Β½ cup chopped fresh basil

Β½ teaspoon salt

ΒΌ teaspoon ground black pepper

ΒΌ teaspoon ground nutmeg

2 large eggs

3 cups marinara sauce (24 ounces)

3 cups ricotta (as implied for the mixture)

Gluten-free manicotti shells

Vegan mozzarella for dairy-free

Low-sodium marinara for health-conscious choices

Instructions

1-In a large bowl, combine 3 cups ricotta, 2 cups mozzarella, Β½ cup Parmesan, 4 garlic cloves, Β½ cup chopped fresh basil, Β½ teaspoon salt, ΒΌ teaspoon ground black pepper, and ΒΌ teaspoon ground nutmeg.

2-Whisk 2 large eggs separately and blend them into the cheese mixture for a creamy consistency.

3-Spread 1Β½ cups marinara sauce in the baking dish and fill a plastic bag with half the cheese mixture; snip a corner and pipe the filling into each manicotti shell.

4-Arrange the filled shells in the baking dish over the marinara, cover with the remaining marinara sauce, and spray foil with non-stick spray before covering the dish.

5-Bake covered for 20 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly. Sprinkle the remaining mozzarella and Parmesan on top and bake for 5 more minutes until the cheese melts. Garnish with basil before serving.
