– 1 large egg, at room temperature

– 2 teaspoons pure vanilla extract

– 1/3 cup granulated or coarse sugar for rolling

Instructions

1-First, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt in a bowl until well combined. This step ensures the spices mix evenly for that warm flavor.

2-In a large bowl, beat the butter with both sugars on high speed until creamy, which takes about 2 minutes. Adding molasses next lets it blend smoothly into the mix.

3-Beat in the egg and vanilla extract for another minute, scraping the bowl as needed to get everything uniform. This creates a sticky dough that’s full of promise.

4-Slowly mix the dry ingredients into the wet ones on low speed until just combined. Cover the dough and chill it for at least 1 hour, or up to 2-3 days, to enhance the texture.

5-Once chilled, preheat the oven if you haven’t already, and let the dough sit if it’s been over 2 hours. Roll 1 tablespoon of dough into balls and coat each in granulated or coarse sugar.
