– 2 large sweet onions, cut into 1/2 inch slices
– 1 pound fresh mozzarella cheese, cut into 1/2 inch slices
– 1/2 cup flour
– 2 beaten eggs
– 1 cup plain breadcrumbs
– 1/2 cup marinara sauce
Instructions
1-Slice the onions into rings about 1/2 inch wide and cut the fresh mozzarella cheese into long slices, also 1/2 inch wide.
2-Pair the onion rings so the cheese slices fit tightly between them, pushing the cheese in to fill the gap completely.
3-Dredge the stuffed onion rings in flour and place them in the freezer for at least 45 minutes; overnight works even better to keep everything intact.
4-Dip the frozen rings into the beaten eggs, then coat them completely with breadcrumbs for an even, crispy layer.
5-Fry in peanut or canola oil until lightly golden brown, which takes about 3-4 minutes per side.
6-Drain on paper towels and serve hot with the marinara sauce for dipping.
