πŸ„ Enjoy a delightful combination of earthy wild mushrooms and creamy goat cheese in this elegant crostini recipe.
🌿 Perfect as a sophisticated appetizer or snack, it highlights fresh herbs for a burst of flavor and freshness.

  • Total Time: 33 minutes
  • Yield: 8-10 crostini

Ingredients

– 1 tablespoon olive oil

– 1 tablespoon butter

– 1 shallot, finely chopped (about 3 tablespoons)

– 1 pound assorted fresh mushrooms (a mix such as oyster, chanterelle, crimini, shiitake, white button, and baby portobella), cleaned and sliced

– Β½ teaspoon salt

– Β½ teaspoon pepper

– 1 teaspoon minced garlic (about 2 cloves)

– ΒΌ cup dry white wine

– 1 teaspoon finely chopped fresh thyme

– 8 oz goat cheese, at room temperature

– Fresh chopped parsley for garnish

Instructions

1-First, heat a large skillet over medium-high heat. Add the olive oil and butter, letting the butter melt completely. Once that’s done, toss in the finely chopped shallot, sliced mushrooms, salt, and pepper. Stir occasionally until the mushrooms turn a nice brown and any extra liquid cooks off this usually takes about 8-10 minutes and brings out that rich, earthy flavor we love in Mushroom Crostini.

2-Next, add the minced garlic and keep stirring for about a minute until it smells amazing. Then, pour in the dry white wine and sprinkle in the chopped thyme, cooking for another 2 minutes until the wine mostly evaporates. This step adds a subtle depth that makes the mushrooms shine. Let the mixture cool a bit, and taste to adjust salt and pepper as needed.

3-While the mushrooms cook, prepare your bread. Slice a baguette into pieces and toast them until golden this creates the perfect crunchy base for your Mushroom Crostini. Once ready, spread the softened goat cheese on each slice, then top with the warm mushroom mixture and a sprinkle of fresh parsley for a fresh finish.

4-Serve right away to enjoy the best texture and taste. If you’re looking for more ideas on quick meals, check out our easy chicken spaghetti recipe for another simple favorite. Remember, the key is in the details, like not overcrowding the pan, which helps the mushrooms brown evenly and avoid sogginess.
