Ingredients
– 2 cups cold heavy whipping cream
– 2 teaspoons vanilla extract
– 1/4 teaspoon coarse Kosher salt (use 1/8 teaspoon if using table salt)
– 14 ounces sweetened condensed milk
– 2 cups crumbled fudge brownies (homemade or store bought), cut into quarter-inch pieces
– 1/2 cup caramel sauce (salted preferred)
– 1/2 cup salted roasted peanuts, roughly chopped
Instructions
1-In a large bowl, beat the heavy whipping cream, vanilla extract, and salt with an electric mixer until soft thick peaks form.
2-Add the sweetened condensed milk and beat for another 1-2 minutes until the mixture is well combined, thick, and fluffy.
3-Spread half of the ice cream mixture into an 8-inch square baking pan.
4-Sprinkle half of the crumbled brownie pieces, half of the chopped peanuts, and half of the caramel sauce over the ice cream layer.
5-Repeat layering with the remaining ice cream mixture, followed by the remaining brownie pieces, peanuts, and caramel sauce.
6-Gently swirl the layers together with a knife, pressing the brownies and peanuts into the ice cream and smoothing the top. Optionally, decorate the top with extra brownie pieces, peanuts, and caramel sauce.
7-Cover the pan tightly and freeze for at least 8 hours, or until the ice cream is firm enough to scoop.
