– 3 cloves garlic minced
– 16 ounces (about 450 grams) dried short-cut pasta (rigatoni recommended)
– 24 ounces (about 680 ml) marinara sauce
– Water to fill empty marinara sauce jar
– 1 cup mozzarella cheese
– 1/2 cup parmesan cheese
– Salt and pepper to taste
– Additional dried Italian seasoning (optional)
– Fresh parsley and/or basil minced for garnish
Instructions
1-First, get your ingredients ready by dicing the chicken and mincing the onion and garlic. Then, heat a large pot or skillet with a drizzle of olive oil over medium-high heat. Add the diced chicken, seasoning it with salt, pepper, Italian seasoning, and garlic powder, and cook for about 5 minutes until itβs mostly done. Set it aside for now.
2-Next, in the same pot, cook the minced onion and garlic for 2-3 minutes until they soften and release their aroma. Pour in the marinara sauce and fill the empty jar with water to add to the pot this helps create the perfect saucy base. Bring it to a boil, then lower to a strong simmer.
3-Finishing Touches: Add the chicken and pasta back into the pot, give it a good stir, cover, and let it cook for 10-15 minutes until the pasta is tender. Stir in the parmesan cheese and 1/4 cup of mozzarella cheese to melt everything together. Finally, sprinkle the remaining 3/4 cup mozzarella on top and cook for another 2-3 minutes until itβs gooey and melted. If you like, add extra Italian seasoning and garnish with fresh parsley or basil.
