8 large eggs

1/2 cup heavy whipping cream

1/2 cup sugar

1/4 cup light brown sugar, unpacked

2 teaspoons vanilla extract

1 1/2 teaspoons ground cinnamon

6 to 7 medium-sized bananas, chopped

3/4 cup all-purpose flour

3/4 cup firmly packed brown sugar

1 teaspoon cinnamon

1/2 cup salted butter, cut into pieces

Instructions

1-Place the bread chunks in a large bowl to set the base.

2-In another bowl, whisk together 8 large eggs, 2 cups milk, 1/2 cup heavy whipping cream, 1/2 cup sugar, 1/4 cup light brown sugar, 2 teaspoons vanilla extract, and 1 1/2 teaspoons ground cinnamon until well combined.

3-Pour the egg mixture over the bread, add 6 to 7 medium-sized chopped bananas, and gently mix to coat everything evenly.

4-Transfer the mixture to the greased casserole dish, spread it out, cover it, and refrigerate overnight to let the flavors meld.

5-The next morning, preheat your oven to 350 degrees Fahrenheit and bake for 35 to 40 minutes until set.

6-While baking, prepare the streusel by mixing 3/4 cup all-purpose flour, 3/4 cup firmly packed brown sugar, and 1 teaspoon cinnamon, then combine with 1/2 cup salted butter cut into pieces until crumbly.

7-Remove the casserole from the oven, sprinkle on the streusel topping, and bake for an additional 5 minutes until golden.

8-Optionally, add extra banana slices on top before that final bake, and serve warm with syrup for the best taste.
