Instructions

1-First, prepare the persimmon syrup: Chop 2 small persimmons and combine them in a pot with 1 cup sugar, 3/4 cup water, 3 strips of lemon zest, 1/4 cup lemon juice, and 2 whole star anise.

2-Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes to blend the flavors.

3-After steeping, remove the solids and puree the liquid until smooth, then chill it in the fridge for later use. This syrup can be made in advance and stored for up to one week, making your cocktail prep even easier.

4-To assemble the cocktail, combine 3 ounces vodka, 3 ounces of the chilled persimmon syrup, and 1 ounce freshly squeezed lemon juice in a shaker filled with ice.
