Instructions
1-Prepare the dressing: In a bowl, combine 1/2 cup mayonnaise, 3 tablespoons grated Parmesan cheese, 3 tablespoons lemon juice, 2 teaspoons Dijon mustard, 2 teaspoons Worcestershire sauce, 1 to 2 cloves minced garlic, salt, and pepper to taste. Mix well, then gradually whisk in 1/3 cup olive oil until smooth. Adjust seasoning if needed for the best taste.
2-Assemble the salad mixture: In a large bowl, toss 4 cups shredded lettuce or spinach, 1 sliced or diced avocado, and about 1/4 cup fresh basil with half of the Caesar dressing.
3-Prepare the tortillas: Warm 4 large tortillas in the microwave for 20 seconds if you like, then spread 1 2 tablespoons of 1/2 cup basil pesto evenly over each one.
4-Fill the wraps: Layer each tortilla with the salad mixture, 1 to 1.5 cups grilled or rotisserie chicken, 6 slices cooked bacon, 1/2 cup crumbled blue cheese or shredded cheddar, and a drizzle of the remaining Caesar dressing.
5-Roll the wraps: Fold in the sides of each tortilla, then roll them up burrito-style to keep everything secure inside.
6-Serve: Enjoy the wraps at room temperature or warm them in a skillet with a bit of olive oil. Serve with extra pesto and dressing on the side for added flavor.
