Ingredients

– 800 grams peeled and chopped low GI or low carb new potatoes

– 1.5 cups frozen peas and corn

– 2 lightly beaten eggs

– Half a cup dry breadcrumbs

– Zest of one lemon plus its juice

– 0.75 cup garlic aioli

– One-third cup chopped spring onions

– One 210-gram can red salmon (drained, bones and skin removed)

– One tablespoon chopped parsley plus extra for serving

– Olive oil cooking spray

– Lemon wedges for serving

Instructions

1-Prepare potatoes: Prepare potatoes by boiling, steaming, or microwaving for 9 minutes until tender, then mash and cool for 10 minutes.

2-Boil peas and corn: Boil peas and corn for one minute, then drain.

3-Combine ingredients: Combine mashed potatoes, peas, corn, eggs, breadcrumbs, lemon zest, quarter cup of aioli, spring onions, and flaked salmon in a bowl; season as needed.

4-Shape patties: Shape into 12 patties using damp hands.

5-Cook patties side one: Spray pie maker with olive oil and cook patties for 10 minutes on one side.

6-Flip and cook side two: Flip and cook for another 5 minutes until done.

7-Prepare aioli for serving: Mix remaining aioli with lemon juice and parsley for serving.
