Ingredients

– 170g white bread sliced into 2cm cubes

– 2 tablespoons olive oil

– Half a teaspoon mixed dried herbs

– 1/8 teaspoon garlic powder

– 100g lighter mayonnaise

– 30g tomato ketchup

– 1/4 teaspoon paprika

– 1 lemon sliced into 8 wedges

– 250g cold water prawns defrosted and drained

– 2 Little Gem lettuce leaves separated

– 225g cooked king prawns defrosted and drained

– 1/2 teaspoon cayenne pepper for serving

Instructions

1-Prepare all ingredients: Toss the 170g white bread cubes with 2 tablespoons olive oil, half a teaspoon mixed dried herbs, and 1/8 teaspoon garlic powder, then season as needed.

2-Bake the croutons: Spread them on a baking sheet and bake for 5 to 7 minutes until golden, turning halfway through for even crisping.

3-Mix the sauce: In a bowl, combine 100g lighter mayonnaise, 30g tomato ketchup, 1/4 teaspoon paprika, and juice from 2 lemon wedges; stir well and season to taste.

4-Add the prawns: Gently stir in the 250g cold water prawns to coat them evenly with the sauce.

5-Arrange on the platter: Lay out the 2 Little Gem lettuce leaves on a serving dish, spoon the prawn mixture over them, and top with 225g cooked king prawns and the baked croutons.

6-Finish and serve: Sprinkle 1/2 teaspoon cayenne pepper on top and add the remaining lemon wedges for garnish.
