– 2 cups all-purpose flour, spooned into measuring cup and leveled-off

– 1 teaspoon baking soda
– ยฝ teaspoon baking powder
– 1 teaspoon ground cloves
– 1 teaspoon ground cinnamon
– 1 teaspoon ground nutmeg
– 1ยฝ sticks (ยพ cup) unsalted butter, softened
– 2 cups sugar
– 2 large eggs
– 1 (15-oz) can 100% pure pumpkin
Instructions
1-Preheat oven to 325ยฐF and place the oven rack in the middle position. Grease two 8 x 4-inch loaf pans generously with butter and dust with flour or use baking spray with flour.
2-In a medium bowl, mix flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg. Whisk well and set aside.
3-In a large bowl or electric mixer, beat butter and sugar on medium speed until just combined and crumbly.
4-Add eggs one at a time, beating well after each addition. Continue beating until mixture is light and fluffy.
5-Beat in pumpkin; the mixture may look grainy or curdled this is normal.
6-Add the dry ingredients and mix on low speed until just combined.
7-Pour batter evenly into prepared pans.
8-Bake for 65 to 75 minutes or until a cake tester inserted in the center comes out clean.
9-Cool loaves in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
10-To refresh the crust after a day, toast slices gently.
