Ingredients

– 10 oz (about 280 g) whole milk ricotta cheese

– 2 eggs

– 1 1/2 cups (about 190 g) all-purpose flour

– 1 tsp baking soda

– 1/4 tsp salt

– 1/4 cup (50 g) white granulated sugar

– 1 tsp vanilla extract

– Oil for frying (about 5 cups)

– 2-3 tbsp powdered sugar for topping

Instructions

1-Heat approximately 5 cups of oil in a medium pot or deep skillet over medium heat until the temperature reaches 320-330ยฐF (160-165ยฐC).

2-Prepare a wire rack lined with paper towels for draining the doughnuts.

3-In a large bowl, whisk together ricotta cheese, vanilla extract, sugar, and eggs until well combined.

4-Add the flour, baking soda, and salt to the wet ingredients and mix thoroughly using a rubber spatula.

5-Using a 1 1/2 tablespoon cookie scoop, dip the scoop into the hot oil and shake off excess oil, then scoop the dough, scrape off excess, and carefully drop the dough balls into the hot oil.

6-Fry the doughnut holes in batches of about six at a time for 5-7 minutes or until they turn deep golden brown.

7-Remove from oil, drain on the prepared wire rack, and dust with powdered sugar once cooled.
