Ingredients
6 large carrots
1ยฝ tablespoons olive oil, melted
ยฝ tablespoon pure maple syrup
Sea salt, to taste
Pinch of cayenne pepper (optional)
5 sprigs fresh rosemary (optional)
Chopped parsley, to garnish (optional)
Instructions
1-Preheat oven to 400ยฐF (205ยฐC).
2-Slice carrots in half lengthwise and arrange in a single layer on a large baking sheet.
3-In a small bowl, mix 1ยฝ tablespoons melted olive oil with ยฝ tablespoon maple syrup. Brush or toss the mixture over the carrots to coat evenly.
4-Sprinkle with sea salt and a pinch of cayenne pepper if using. Tuck rosemary sprigs between the carrot halves if desired.
5-Roast for about 25 minutes, flipping once halfway through, until carrots are tender and caramelized.
6-Serve garnished with chopped parsley, if desired.
