Ingredients
– 4 large eggs
– 2 Tbsp milk (about 30 ml) plus an extra 2 Tbsp beaten egg for brushing the tops
– 8 oz (≈ 225 g) refrigerated crescent-roll dough, unrolled and separated into 8 triangles
– 8 cooked sausage links (or alternative protein such as bacon, ham, turkey or veggie sausage)
– ½ cup (≈ 60 g) shredded cheddar cheese
– Optional: chopped peppers, onions or other vegetables for the scrambled eggs
Instructions
1-Preheat the oven to 350 °F (180 °C).
2-In a skillet, cook the sausage links until fully done; set aside.
3-Beat 4 eggs with the 2 Tbsp milk. Reserve 2 Tbsp of this mixture in a small bowl for later brushing.
4-Scramble the remaining egg mixture in the skillet until just set.
5-Lay each crescent-roll triangle flat, place one cooked sausage link on the wide end, add about 1 Tbsp of the scrambled eggs, and sprinkle a pinch of shredded cheese.
6-Roll the triangle loosely from the wide end, using your fingers to keep the filling inside.
7-Arrange the roll-ups on an ungreased cookie sheet, brush the tops with the reserved beaten egg, and bake for 16 18 minutes, or until golden brown.
