  • Total Time: 4 hours 15 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

1 pound lean turkey sausage

1 bag (19 ounces) frozen cheese tortellini

3 cups baby spinach leaves

2 cans (14.5 ounces each) diced tomatoes, drained

3 1/2 cups chicken broth

1/2 teaspoon salt

1/4 teaspoon pepper

1 teaspoon Italian seasoning

1 block (8 ounces) cream cheese, cubed

1 cup shredded mozzarella cheese

Instructions

1-Step 1: Brown the Sausage Heat a skillet over medium. Brown and crumble 1 pound lean turkey sausage, about 5 to 7 minutes. Drain excess grease. This quick step builds flavor for your one pot slow cooker tortellini sausage recipe.

2-Step 2: Prep the Slow Cooker Grease the inside of your large slow cooker lightly. This prevents sticking.

3-Step 3: Layer the Tortellini and Sausage Place the 19-ounce bag of frozen cheese tortellini in the bottom. Spread the cooked sausage evenly over the top.

4-Step 4: Add Vegetables, Tomatoes, Broth, and Seasonings Layer on 3 cups baby spinach leaves, 2 drained cans of diced tomatoes, 3 1/2 cups chicken broth, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon Italian seasoning. Stir gently if needed.

5-Step 5: Top with Cream Cheese Arrange the cubed 8-ounce block of cream cheese evenly on top. For smoother melt, blend it with a bit of broth first, as a handy tip.

6-Step 6: Cook Cover and cook on low for up to 5 hours or high for 3 to 4 hours. Stir occasionally after the first two hours to prevent sticking.

7-Step 7: Finish and Rest Sprinkle 1 cup shredded mozzarella over the top. Remove the lid and let stand 15 to 20 minutes before serving. The cheese melts perfectly.

Notes

๐ŸŒถ๏ธ Use spicy sausage for more heat or add sautรฉed onion and garlic for extra flavor depth
๐Ÿง€ For smoother integration, blend cream cheese with some chicken broth before adding to prevent clumps
โฐ To prevent mushy tortellini, you can cook tortellini separately and add at the end if you prefer a firmer texture
