Ingredients

– 2 lbs. green beans, rinsed, with stem ends trimmed and beans cut to 4-inch lengths

– 2 Β½ cups white vinegar

– Β½ cup white wine vinegar

– 1 Β½ cups water

– 2 tablespoons sugar

– 3 tablespoons salt

– 8 red Thai chili peppers, sliced lengthwise (leaving the pepper intact; dried versions can be used)

– Β½ sweet onion, sliced thin lengthwise and divided into 4 portions

– 4 garlic cloves, crushed

– 2 teaspoons mustard seeds

– 2 teaspoons crushed black peppercorns

– 8 dill sprigs

Instructions

1- Prepare a boiling water canner and preheat jars in simmering water without boiling. Wash lids and set aside with bands.

2- In a saucepan, combine 2 Β½ cups white vinegar, Β½ cup white wine vinegar, 1 Β½ cups water, 2 tablespoons sugar, and 3 tablespoons salt. Bring to a boil, stirring to dissolve the sugar and salt.

3- Into each of 4 hot jars, place 1 crushed garlic clove, Β½ teaspoon mustard seeds, and Β½ teaspoon crushed black peppercorns. Pack the green beans cut side up, then add the onion slices (divided into portions), 2 Thai chili peppers, and 2 dill sprigs per jar.

4- Pour the hot brine over the beans, leaving a Β½-inch headspace. Remove any air bubbles, wipe the jar rims, center the lids, and apply bands fingertip tight.

5- Place the jars in the boiling water canner and process for 15 minutes, adjusting for altitude as needed. Turn off the heat, remove the canner lid, let the jars stand for 5 minutes, then remove and cool for 12 to 24 hours. Check the lids for seal stability.
