Ingredients

– 8 boneless, skinless chicken thighs (about 2 pounds)

– 2 teaspoons vegetable oil

– 2 teaspoons granulated garlic for the spice rub

– 2 teaspoons chili powder for the spice rub

– ยฝ teaspoon onion powder for the spice rub

– ยฝ teaspoon coriander for the spice rub

– 1 teaspoon kosher salt for the spice rub

– 1 teaspoon cumin for the spice rub

– ยฝ teaspoon chipotle chili powder for the spice rub

– ยฝ cup honey for the glaze

– 1 tablespoon apple cider vinegar for the glaze

Instructions

1-First, mix all the spice rub ingredients in a bowl: that’s 2 teaspoons granulated garlic, 2 teaspoons chili powder, ยฝ teaspoon onion powder, ยฝ teaspoon coriander, 1 teaspoon kosher salt, 1 teaspoon cumin, and ยฝ teaspoon chipotle chili powder.

2-Next, trim any excess fat from the 8 boneless, skinless chicken thighs and pat them dry for even cooking.

3-Then, drizzle the chicken with 2 teaspoons vegetable oil and rub it in evenly with your hands to help the spices stick.

4-Now, coat the chicken thoroughly with the spice rub you just mixed.

5-Grill the chicken for 3-5 minutes per side until it’s cooked through, aiming for an internal temperature of at least 165ยฐF, but 170-175ยฐF for the best texture and flavor.

6-While that’s happening, warm the ยฝ cup honey to make it thinner, then stir in 1 tablespoon apple cider vinegar to create the glaze.

7-Reserve 2 tablespoons of this glaze for serving, and brush the rest on both sides of the chicken in the last moments of grilling.

8-Finally, drizzle the reserved glaze over the cooked chicken before serving to add that extra sweet tang.
