Ingredients

– 1.5-inch slice jalapeño pepper, with seeds

– 1 oz fresh lime juice

– 0.5 oz (1 Tbsp.) agave nectar

– 1.5 oz silver tequila (100% blue agave), Blanco/Silver recommended

– 4 oz fresh orange juice

– 0.5 oz pomegranate juice

– 0.5 orange slice for garnish

– 0.25-inch jalapeno slices for garnish

– Ice

– Club soda for non-alcoholic version

Instructions

1-First Step: Muddle your jalapeño slice and fresh lime juice in a cocktail shaker or sturdy glass. Press and twist about 10-15 times until you can smell the spicy aroma releasing this is where the magic begins! The muddling process breaks down the jalapeño’s cell walls, releasing all that spicy goodness into your lime juice.

2-Second Step: Add the agave nectar, silver tequila, and fresh orange juice to your shaker. If you’re wondering why we use silver tequila in this spicy tequila sunrise, it’s because the clean, crisp flavor lets the spicy and citrus notes shine through without competing with the oak flavors you’d find in aged tequilas.

3-Third Step: Fill your shaker about two-thirds full with ice. Put the lid on tightly (I’ve had too many cocktail spills to not mention this!) and shake vigorously for about 15-20 seconds or until the shaker feels frosty on the outside. The outside should be so cold it almost hurts to touch that’s how you know it’s ready!

4-Fourth Step: While you’re shaking, prepare your serving glass by pouring the pomegranate juice into a tall glass. This will create the signature “sunrise” effect as it naturally sinks to the bottom. Then fill the glass about three-quarters full with fresh ice larger cubes work better for this as they melt slower and keep your drink cold without watering it down too quickly.

5-Fifth Step: Gently strain the shaken mixture into your glass over the pomegranate juice. Pour slowly and try to pour against the inside of the glass to maintain the distinct layers. The moment when the orange mixture cascades over the red pomegranate juice is just beautiful it really does look like a sunrise in a glass!

6-Final Step: Garnish with the orange slice and additional jalapeno slices. The orange slice adds a lovely fresh aroma as you bring the glass to your lips, while the extra jalapeno slices give a visual hint of the spicy adventure you’re about to enjoy. Give it a quick stir if you want to mix the layers, or enjoy the visual effect by drinking it as is!

7-First Step (Infusion Preparation): Combine 8 oz silver tequila, 1 cup pineapple chunks, and 1 small sliced jalapeno in a sealed container like a Mason jar. The pineapple adds natural sweetness and a tropical note that complements the tequila perfectly. Make sure your jalapeno is sliced this increases the surface area and allows more flavor to infuse into the tequila.

8-Second Step: Seal the container tightly and store it in a cool, dark place for 48 hours. I usually put mine in a kitchen cabinet away from the stove or sunlight. Give it a good shake once or twice a day to help the flavors meld together. Watching the color change as the infusion develops is fascinating!

9-Third Step: After 48 hours, strain the infused tequila through a fine-mesh strainer or cheesecloth to remove all the solids. Be sure to press on the pineapple and jalapeno pieces to extract every last drop of flavor! Discard the solids they’ve given all their flavor to the tequila.

10-Fourth Step: Now it’s time to assemble your drink! For each serving, use 2.5 oz of your pineapple-jalapeño infused tequila. Combine it with 4 oz orange juice in a shaker with ice. The fruit-infused tequila will make this version of the spicy tequila sunrise even more special.

11-Fifth Step: Shake well until thoroughly chilled, then strain into ice-filled glasses. At this point, the magic layering effect comes into play slowly add 1 tablespoon of grenadine to each glass. Watch as it sinks to the bottom, creating that gorgeous sunrise effect.

12-Final Step: Garnish your creation with an orange slice and maybe an extra jalapeno ring. The visual contrast between the orange, green, and red is absolutely stunning and will definitely impress your guests!
