Ingredients

3 sticks unsalted butter, softened

1 tablespoon minced fresh rosemary

2 tablespoons minced fresh thyme

ΒΌ cup sliced green onions

2 finely minced garlic cloves

Zest and juice of 1 lemon

2 teaspoons coarse salt

Β½ teaspoon pepper

3 russet potatoes, cut into batonnet slices

Coarse salt to taste

2 New York strip steaks, 12 ounces each

2 tablespoons olive oil

8 to 10 sprigs fresh thyme

8 to 10 garlic cloves

4 tablespoons unsalted butter

Coarse salt and pepper to taste

Instructions

1-Step 1: Making the Herb Butter Whip the softened unsalted butter on high speed for 5-7 minutes until it’s light and fluffy. Then, mix in the rosemary, thyme, green onions, garlic, lemon zest and juice, salt, and pepper. Set this herb butter aside so it can be used later to top your steak.

2-Step 2: Preparing and Frying the Fries Cut the potatoes into fries and rinse them in cold water to remove excess starch. Heat oil to 300Β°F and fry the potatoes for 3 minutes, then drain them on parchment paper. When you’re ready to serve, heat the oil to 350Β°F and fry the fries again for 3-5 minutes until they’re crispy and browned, and season with coarse salt.

3-Step 3: Cooking the Steak Season the steaks with coarse salt and pepper. Heat olive oil in a pan over high heat until it’s smoking, then add the steaks and reduce to medium heat, pressing for 15-20 seconds. Cook for 2-3 minutes on one side without moving, flip, and add fresh thyme, garlic, and butter, basting for 2-4 minutes.
