  • Total Time: 45 minutes

Ingredients

– 2 cups uncooked rice (such as white, brown, long grain, or quinoa)

– 2 small heads of broccoli, chopped

– 3 large chicken breasts

– 2 tablespoons oil

– 1 teaspoon salt

– 1/2 teaspoon pepper

– 1 teaspoon chili powder

– 1 teaspoon smoked paprika

– 1 teaspoon onion powder

– 1 teaspoon oregano

– 1/2 cup soy sauce

– 1/2 cup honey

– 1/4 cup rice vinegar

– 3 cloves garlic, minced

– 2 tablespoons sriracha

– 2 teaspoons sesame oil

– 1 teaspoon ground ginger

– 2 teaspoons arrowroot powder mixed with 2 tablespoons water (or substitute with cornstarch)

– 1/2 cup mayonnaise

– 1 tablespoon sriracha

– 2-3 tablespoons water

– Sesame seeds

– Avocado slices

Instructions

1-First, cook the rice according to the package instructions until it’s fluffy and set aside.

2-Then, steam the chopped broccoli until it’s fork-tender and ready to go.

3-Cut the chicken into bite-sized pieces, toss them with oil and spices like salt, pepper, chili powder, smoked paprika, onion powder, and oregano.

4-Next, cook the seasoned chicken in an air fryer at 400Β°F for about 12 minutes or until it reaches 160Β°F inside.

5-While that’s happening, make the sticky sauce by boiling soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ground ginger in a saucepan.

6-Add the arrowroot powder mixed with water and simmer for 4-5 minutes until it thickens.

7-Once everything is cooked, layer the rice, broccoli, and chicken in bowls.

8-Pour the sticky sauce over the top and drizzle with spicy mayo made from mayonnaise, sriracha, and water.

9-Finish with sesame seeds and avocado slices for extra flavor and crunch.
