Instructions

-Preheat oven and prep pan: Start by preheating your oven to 350°F (180°C) and greasing a 9-inch loaf pan or large baking dish to avoid sticking. This step sets the stage for a smooth cooking process that yields a moist, flavorful result.

-Mix meat and seasonings: In a large bowl, gently mix the ground beef, ground pork, egg, parmesan cheese, bread crumbs, minced garlic, parsley, salt, and pepper. Avoid overworking the mixture to keep the meat tender; just combine until everything holds together. Gradually add 3 tablespoons of milk to reach a compact consistency that rolls easily.

-Spread and layer filling: Spread the meat mixture into a rectangle about ¼ inch thick on parchment paper for easy handling. Layer the top with cheese slices or shredded cheese and chopped greens to form the delicious center.

-Roll and add veggies: Using the parchment paper, carefully roll the meat into a loaf starting at the short end, then transfer it to the prepared pan. Next, prepare the side by tossing cubed potatoes and sliced carrots with oregano, chopped rosemary, salt, and olive oil. Add them to the baking dish around the meatloaf if you want a complete meal in one go.

-Bake and rest: Bake everything for 45-60 minutes until the internal temperature hits 160°F (70°C), ensuring it’s fully cooked. After baking, let the meatloaf rest for 5-10 minutes before slicing; this helps lock in juices for better texture.
