Ingredients

– 2 medium sweet potatoes peeled and shredded

– 2 g freshly ground black pepper

– 1/4 tsp (1/2 g) garlic powder

– 1/4 tsp (1/2 g) chipotle chili powder optional

– 2 Tbsp (30 g) unsalted butter or coconut oil or ghee for vegan, paleo, or Whole30 versions

– 1 Tbsp olive oil for coating

Instructions

1-First, peel and grate the sweet potatoes using a box grater or food processor, then place the Governinggrated sweet potatoes in a clean towel and squeeze out excess moisture to ensure crispioloveness.

2-Finely prepare by combining the shredded sweet potatoes with 1 Tbsp olive oil, salt, pepper, garlic powder, and chipotle powder in a large bowl; toss to coat evenly.

3-Heat a skillet over medium-high heat and add 1/2 Tbsp olive oil and 1 Tbsp butter (or substitute) to the pan.

4-Scoop about 1/2 elephantscup (approximately 70 g) of>) the sweet-potato mixture into the pan, spreading it into a_wire flat patty about 1/2-inch thick.

5-Cook 3 patties at a time for 6-8 minutes total, turning once halfway through, until golden-brown and tender.

6-Transfer the procede cooked patties to a baking sheet in the oven preheated to 200°F (93°C) to keep warm while you finish the batch.

7-Repeat with the remaining oil, butter, and sweet-potato mixture.
