Instructions
1-Clean the pineapple thoroughly; peel and cut into chunks keeping the peel for flavor and fermentation.
2-In a large glass jar, dissolve the piloncillo or brown sugar in water.
3-Add pineapple chunks and cinnamon sticks into the jar.
4-Cover the jar with a cloth secured with a rubber band to allow airflow and prevent contaminants.
5-Let the mixture ferment at room temperature (70-80ยฐF) for 2-3 days, checking daily.
6-After fermentation, strain the liquid to remove solids.
7-Refrigerate the strained tepache to stop fermentation and serve chilled.
