4 large eggs (50-55g each)

1 1/2 cups caster or superfine sugar

1/2 cup (115g) unsalted butter, cut into small cubes

1 cup full-fat milk

3 teaspoons vanilla extract

3 teaspoons vegetable or canola oil

2 sticks (225g) unsalted butter, softened

1 lb (500g) sifted powdered sugar

3 teaspoons vanilla extract

2 to 4 tablespoons milk for thickness adjustment

Instructions

1-Preheat oven to 180ยฐC (350ยฐF): Grease and line two 8-inch (20cm) cake pans.

2-Whisk together the flour, baking powder, and salt: set aside.

3-Beat eggs for 30 seconds on medium speed, then gradually add sugar over 45 seconds, and beat for 7 minutes on high speed until thick, white, and tripled in volume.

4-Heat milk and butter together until hot but not boiling.

5-Fold the flour mixture into the egg mixture in 3 additions, mixing just to incorporate.

6-Mix about 1 1/2 cups batter into the hot milk and butter to lighten it, then gently pour this back into the remaining batter.

7-Scrape the bowl and mix briefly until smooth. Pour the batter evenly into the pans.

8-Bang the pans on the counter 3 times to release large air bubbles.

9-Bake for 30 minutes until golden and a toothpick comes out clean.

10-Cool cakes in pans for 15 minutes, then turn out onto racks. Cool completely before frosting.
