12 oz (approximately 340 g) chopped fresh watermelon, or 1 cup (approximately 240 ml) pure watermelon juice

1 tablespoon + 1 teaspoon (approximately 22 g) honey

Apple cider vinegar to taste (start with 1/2 teaspoon and increase as desired)

Enough club soda to top each glass (approximately 1/2 cup or 120 ml per drink)

2 large fresh mint leaves for the juice, plus extra for garnish

Ice as needed

Optional garnish: a small watermelon chunk and a mint leaf on a toothpick

Instructions

1-Place the chopped watermelon in a blender or food processor, then pulse until it reaches a thin, watery consistency, about 30 seconds. This step brings out that sweet, juicy base we all love.

2-Pour the blended mixture through a cheesecloth or fine-mesh strainer into a bowl, pressing to get as much juice as possible, and discard the pulp for a smoother finish.

3-Transfer the strained juice to a container with a spout, whisk in the honey until itโ€™s fully dissolved, add the apple cider vinegar starting with a small amount and tasting as you go, then stir in 2 fresh mint leaves.

4-Cover the juice and refrigerate it for 15 minutes to chill and let the flavors mingle just like how I chill out after a long day.

5-Fill a glass halfway with ice, pour the chilled watermelon-mint juice to the halfway point, and top it off with club soda for that bubbly lift.

6-Finally, add a small watermelon chunk and a mint leaf on a toothpick as garnish if you want to make it look extra special it always wows my guests.
