Prepare a 9ร—5 loaf pan by either greasing it thoroughly with coconut oil or lining it with parchment paper, leaving an overhang on the long sides. This parchment paper sling will make removing the baked bread much easier later! Next, measure out all your ingredients. This is especially important with the coconut oil remember to melt it first before measuring, as solid and liquid measurements differ significantly. If you’re adding any optional mix-ins like nuts or chocolate chips, have those ready as well.

2-Second Step: Combine Dry Ingredients In a large bowl, whisk together the granulated sugar, brown sugar, all-purpose flour, white whole wheat flour, baking soda, salt, and pumpkin pie spice. Whisk thoroughly for about 30 seconds to ensure everything is evenly distributed. This step is crucial for avoiding pockets of baking soda or salt in your finished bread, which can result in unpleasant bites.

3-Third Step: Prepare Wet Ingredients Create a well in the center of your dry ingredients. Into this well, add the pumpkin puree, eggs, melted coconut oil, water (or milk/yogurt mixture if using), and vanilla extract. The well helps contain the wet ingredients initially, making it easier to incorporate them gradually into the dry mixture.

If you’re using add-ins like nuts, seeds, or chocolate chips, gently fold them in now with a spatula, taking care not to stir more than necessary.

5-Final Step: Baking and Cooling Pour the batter into the prepared loaf pan and smooth the top with a spatula. If desired, you can sprinkle the top lightly with additional cinnamon or some reserved nuts/seeds for a beautiful presentation. Place the pan in your preheated oven and bake for 55-65 minutes (most commonly about 60 minutes). The bread is done when a toothpick inserted into the center comes out clean. If you notice the top is browning too quickly before the center is cooked (usually around the 40-minute mark), tent the pan loosely with aluminum foil for the remainder of the baking time. Once baked, remove the bread from the oven and let it cool in the pan for 20 minutes. This cooling period allows the bread to set and makes it less likely to break when you remove it from the pan. After 20 minutes, carefully invert the loaf onto a wire rack or use the parchment paper to lift it out. Allow it to cool completely before slicing I know it’s tempting to cut into warm bread, but cooling completely prevents crumbling and ensures the best texture.
